This salsa is especially delicious later in the summer when the ingredients are freshly harvested.  

And adding sauerkraut makes it good for your gut!

Makes a great topping for fish or any kind of burger.

Makes: 1-1/2 cups

Prep time: 10 minutes

Ingredients

1 medium peach, chopped

1 medium tomato, chopped

¼ cup sauerkraut, chopped

¼ cup red onion, finely chopped

¾ cup fresh parsley, finely chopped

2 Tbsp olive oil 

2 Tbsp lemon juice

1 tsp balsamic vinegar 

sea salt to taste

Directions

  1. Mix all ingredients together with a fork. 
  2. Add sea salt to taste if needed.

Options:

  1. Add other veggies such as cucumber or avocado.
  2. Add other flavour enhancers such as minced garlic.
  3. Substitute lime juice for lemon juice
